CHEVON
Chevon, goat meat, is considered to be as delicate tasting as lamb and is the main meat
source among many ethnic groups. Goat meat is regularly enjoyed in most regions of the
world: the Mediterranean, Caribbean, Middle East, Latin America, and Asia.Chevon has
the least amount of fat and calories and the highest amount of protein than any other
domestic livestock or poultry.
The majority of chevon that is consumed in the United States is imported into the United
States, because the demand far exceeds the current US produced supply. The demand
for goat meat continually increases in Canada and the United States to the point where
Canada imports over 3.5 million Lbs per YEAR and the United States imports 1.5 million lbs
per WEEK.

CABRITO
Cabrito is another name for goat meat but, not all goat meat. Cabrito is to Chevon
what Veal is to Beef. Cabrito is a young buckling that is milk-fed only and less than 30 lbs.
Generally Cabrito is purchased whole and then roasted. From a 30 lb buckling, you will
get about 15 lbs of meat.
